Maitake is a delicious and versatile mushroom that grows in large, ruffled clusters preferring oak, elm or maple wood types. It has a rich, earthy flavor and a meaty texture that makes it perfect for stir-fries, soups, sauces, and casseroles. It is one of my favorite mushrooms hands down. Maitake, also known as hen of the woods, is a great source of protein and fiber, and has been used in traditional medicine to boost immunity, lower blood pressure, and fight cancers.

To grow your own maitake, place the oak log in a shady, moist, and cool spot, and enjoy the harvest around Fall. Stumps or logs should be partially buried, horizontally or vertically, to initiate fruiting. Fruitings most frequently arise at or near the stump/soil interface. Two or three years will often pass before fruitings occur.

Maitake mushrooms thrive in temperatures between 55°F and 70°F (13°C to 21°C) during fruiting.
